This weeks recipe has been made at our home since the 90's. It is a basic hamburger + tomatoes... recipe. A cross between several things. (Next week for "Throw Back Thursday I will post a variation on this recipe.)
Frito Chili Cassarole
(What can I say. It was the 90's and my husband really likes cassaroles.)
1 lb. ground beef (I have mine browned and frozen in about 1 lb. bags.)1/4 chopped onion
1 can black beans - rinsed and drained
1 can kidney beans - rinsed and drained
32 oz. tomato sauce (about) (Sometimes I use about 16 oz. of tomato sauce and a can of stewed tomatoes (I sort of crush the tomatoes))
1 pack taco seasoning
1 bag Fritos (I prefer not scoops)
1 bag Fritos (I prefer not scoops)
grated cheese (about 3-4 cups)
2 cups sour cream (I use light)
Brown beef and onion together and drain. Add beans, tomato sauce taco seasoning and 1 cup grated cheese.
Layer 1/2 bag of Fritos in sprayed 9x13 baking dish. Pour meat filling over the Fritos.
Bake 20-25 mins.at 350*.
Top with 2 cups of sour cream, then the rest of the Fritos (I save about 1 cup of Fritos in the bag for a "fresh crunch" on the planned overs the next day.) and LOTS of grated cheese:) Bake 3 or 4 more minutes.
